The harvest window problem
Fruit ripens all at once. Prices collapse exactly when supply peaks, and whatever cannot be sold or transported in a few days is lost. For smallholder growers this is the difference between a good season and a wasted one.
Drying as a preservation route
Removing moisture stops the spoilage that makes fresh fruit perishable. A dried product keeps for months, weighs far less to transport, and can be sold when prices recover instead of at the bottom of the glut. Solar drying does this without buying fuel.
Why a solar dryer rather than open-air drying
Drying fruit on open racks exposes it to dust, insects, rain and unpredictable sun. An enclosed solar dryer controls airflow and temperature, keeps contaminants out, and produces a consistent product that meets buyer quality expectations — which is what turns a preserved surplus into a saleable product.
Beyond the equipment
